Honey Garlic Chicken Sheet Pan Dinner
This simple sheet pan dinner courtesy of Life In The Lofthouse has become a favorite of ours. We have been making it almost once every week since I found it, and we switch up the type of potatoes we cube or the veggie we use (green beans are a favorite for me in this dish).
The prep is simple, the clean up is even more simple and the flavor is fantastic. It takes me about 20 minutes to prep it and it cooks for 30 minutes. Not too bad especially if you can do some of the prep early in the day (like making the glaze or washing the veggies). It also reheats really well and the leftover chicken is great in chicken wraps or over salad.
If you have never tried a sheet pan dinner, I highly recommend it. Other than perhaps grilling, or the crockpot, there are not many recipes that come with an easier cleanup. Additionally you don’t have to think of sides or an interesting way to spice up your veggies, it’s all done for you.
*It is of note that when I say it’s a family favorite, you can assume my 4-year-old hates it. Unless I specifically state he actually ate something, it’s safe to assume he had something like a mozzarella cheese stick, protein shake (see my prior post on this) or a hard-boiled egg in place of most of the dish. With this recipe however, when he tried a bite he did say “It’s not disgusting, but I’m not eating it” which in my world is as good as a rave review from my little food critic.
